Sourcing the Finest Cocoa Beans
Our chocolate journey begins with carefully selected cocoa beans from the world's premier growing regions. We work directly with farmers in Ecuador, Ghana, and Madagascar to ensure we source only the highest quality beans. These partnerships guarantee sustainable practices and fair compensation for the hardworking farmers who cultivate these precious beans.
The Roasting Process
Once the beans arrive at our facility, our master chocolatiers begin the roasting process. This critical step develops the complex flavors that make our chocolate distinctive. The temperature and duration are precisely controlled to bring out the unique characteristics of each bean variety.
Grinding and Conching
After roasting, the beans are cracked and winnowed to separate the nibs from the shells. The nibs are then ground into chocolate liquor, a smooth paste that forms the base of all our chocolate products. Through a process called conching, we refine this mixture for up to 72 hours, creating the silky texture our customers love.
Tempering and Molding
The final stages involve tempering the chocolate to achieve that perfect snap and glossy finish. Our craftspeople carefully pour the tempered chocolate into molds, creating the beautiful bars and shapes that grace our product line.
